材料
新鮮藍青口 - 約1kg
洋蔥 - 1 個
白酒 - 80ml
淡忌廉 - 80ml
牛油 - 15g
麵粉 - 10g
番芫茜 - 數棵
步驟
- 先將青口沖洗乾淨,用刀刮去殼上的依附物,並拔去露出來的海藻
- 洋蔥切碎
- 用牛油開鍋,炒香洋蔥至金黃色,下麵粉炒勻。
- 下少許白酒deglaze,放入藍青口,淋上餘下的白酒,炒約1分鐘,讓酒精揮發,蓋上蓋以中火煮約4分鐘至青口打開。
- 開蓋後,倒入淡忌廉芝、蕃茜碎,轉細火開蓋煮多1分鐘就可完成!

Minced Beef 免治牛肉 150g
Potato 薯仔 350g
Onion 洋蔥 1pc
Panko 日式麵包糠 50g
Salt 鹽 1tsp
Ground Black Pepper 黑胡椒碎 0.25tsp
Garlic Powder 蒜粉 1tsp
Worcestershire sauce 喼汁 1tsp
做法:
1. 洋蔥切辭碎
2. 薯仔刨幼絲
3. 洋蔥、薯仔、牛肉拌勻
4. 下調味
5. 加入麵包糠拌勻
6. 把肉團壓成一塊塊
7. 放雪櫃半小時
8. 慢火煎香
White sauce:
Unsalted butter: 35g
Flour: 35g
Milk: 500ml
Salt: 1 teaspoon
Garlic powder: 1/2 teaspoon
Onion powder: 1/2 teaspoon
Parmesan Cheese (grated): 30g
Cinnamon: 1/4 teaspoon
Seafood and Fettucine
Fettucien: 320g
Mixed seafood: 150g
Salt and pepper: pinch (for seafood marinade)
Minced garlic: 2 cloves
White wine: 20ml
Toppings:
Black pepper, Parsley, Paprika
Mozarella cheese: 50g
Steps:
1. 海鮮加鹽及黑椒拌勻備用
2. In 26cm buffet, 燒熱油,蒜蓉炒香後加入海鮮炒勻, 濽白酒, 備用
*** 預備白汁跟烚意粉可同時進行 ***
4. Boil water for cooking fettuccine
5. While waiting for water to be boiled. In stainless steel pot, 牛油煮溶,加入麵粉拌勻
6. 牛油起泡後, 熄火,一邊加入牛奶一邊拌勻
7. After the milk blended with roux, add salt, garlic poweder, onion powder, cinnamon. Stir until mix well.
8. Preheat over to grill mode 200C
9. When water boiled, start cooking the fettuccine
10. While cooking fettuccine, turn on the heat of the pot for white sauce
11. Add the cheese to the white sauce and keep stirring until the cheese melt. Turn off the heat and set aside.
12. When fettuccine is ready, add the cooked fettuccine into buffet, mix with seafood.
13. Add the white sauce into buffet. Mix well.
14. Sprinkle with black pepper, parsley, paprika
15. Add mozzarella cheese
16. Put into the oven for 4 mins.
